Irish Potato Soup

The potato is king in this classic Irish soup recipe. Celebrate St. Patrick's Day with a simple yet filling potato recipe that you will want to use throughout the year. Happy St. Patrick's Day!

1/2  cup  unsalted butter

1  medium onion, thinly sliced

3  leeks, sliced

3  large baking potatoes, peeled and cut into 1/4-inch-thick slices

3  (14 1/2-ounce) cans chicken broth

1  teaspoon  salt

1/4  teaspoon  pepper

Toppings: shredded Cheddar cheese, crumbled cooked bacon, chopped fresh chives

1. Melt butter in a large saucepan over low heat; stir in onion and leek. Cover and cook 20 minutes.

2. Stir in potato; cover and cook 15 minutes.

3. Stir in broth, salt, and pepper; bring to a boil. Reduce heat, and simmer 30 minutes or until potato is tender. Remove from heat, and cool slightly.

4. Process soup in batches in a blender until smooth, stopping to scrape down sides; return to saucepan, and cook over medium heat until thoroughly heated.

Serve with desired toppings.

I really like that delicious looking irish potato soup. I think that many people would love to have a taste of that delicious soup. I think that I should have its recipe and made it at home.

Terrific information. I like the commenting process and the software is extremely practical. I'm sorry for the off theme nevertheless, but I can't help but mention the busting news. Andrew Breitbart died today and he had been only forty three. I am still recovering from this news since I had been a huge enthusiast of the man's column. What a great shock.
