We all know that April 15th is the deadline to file your federal income tax forms. In the past two years we have heard much about the Tea Party movements across the United States, The Boston Tea Party of yore, and many other conversations about tea in general. I especially love to drink tea. 2 or 3 cups a day is the norm in my life. I like green tea, black tea, and all the other specialty teas that are on the market today.
Tea is naturally relaxing and refreshing. A cup of tea can be healing and calming - a simple moment of tranquility in a busy day. Tea is a strong antioxidant, rich in vitamins C and E. Japanese research shows it to be a powerful enemy of the hated "free radicals," which cause our bodies to age. Tea has a variety of beauty benefits and can be used all over your body to cleanse the skin, soothe sunburn, highlight the hair, relax your muscles, and calm puffy eyes.
Recent studies in leading medical journals declare tea a potential heart tonic, cancer blocker, fat buster, immune stimulant, arthritis soother, virus fighter and cholesterol detoxifier. Not bad for a lowly shrub soaked in a little hot water. "Tea is beating all scientific expectations as the most potent health beverage ever," says researcher John Weisburger at the American Health Foundation. "The many ways tea can promote health is truly astonishing." Bottom line: Each day you should drink three to six 8-ounce cups of tea. It can be black or green, hot or iced, decaf or not. If April 15th has you all stressed and unhappy, I recommend this tea recipe as a tonic to soothe and relax your troubled mind and body.
8 cup(s) cold water
8 tea bags, tags removed
8 sprig(s) fresh mint, plus additional for serving
1/4 cup(s) fresh lime juice, (from 2 to 3 limes)
Ice cubes
Superfine sugar, (optional)
1. In covered 3-quart saucepan, heat 4 cups water to boiling over high heat.
2. Remove from heat; stir in tea bags and mint. Cover and let steep 5 minutes.
3. Stir tea; remove tea bags and mint. Into large pitcher with tight-fitting lid, pour tea, lime juice, and remaining 4 cups water. Makes 6 1/2 cups.
4. Cover and let stand until ready to serve or overnight. (Do not refrigerate or tea will become cloudy. If this happens, add up to 1 cup boiling water, gradually, stirring until tea clears.)
5. Serve over ice with mint, and sugar if you like.
Makes 8 servings.
Tips & Techniques
Superfine sugar is a finer version of granulated sugar. Although it's available at most supermarkets, you can make your own by pulsing granulated sugar in a blender or processor until the crystals are more powder-like. Confectioners' sugar (which contains some cornstarch) is not a good substitute.
