4-1/2 cups mashed potatoes
3 eggs, lightly beaten
1/2 cup matza meal
1 tablespoon salt
1/4 teaspoon freshly ground pepper
3 large onions, cut up
4 tablespoons oil
1. Preheat over to 400 degrees. Lightly oil 13 X 9 inch baking pan.
2. Combine mashed potatoes, beaten eggs, matza meal, 2 teaspoons salt, and the pepper. Mix well.
3. Brown onions in oil and add remaining teaspoon salt.
4. Flatten small pancakes with your hands out of the potato mixture.
5. Cover with brown onions. Press another pancake on top.
6. Roll pancakes in matza meal and bake until brown, about 20 to 30 minutes.
Makes 6 to 8 servings.
