Artichoke Crostini with Brie

A brie and artichoke recipe to certainly remember. Exotic, tasty, and colorful, this brie appetizer is a perfect addition for an elegant meal at home or as a late night snack after the Symphony. 

 

2 jars (6 oz each) marinated artichoke hearts, drained, liquid reserved4904dc680644c13beb033e1e6140ae7e[1]

 

6 large basil leaves

 

1 large garlic clove

 

1 French bread baguette (about 8 oz), cut into ½ inch slices

 

8 oz chilled Brie

 

1 tsp dried crushed red pepper

Food Processor

 

 

1. Preheat broiler. Combine drained artichoke hearts, basil, and garlic in food processor and finely chop.

 

2. Season to taste with salt and pepper. Brush bread with reserved artichoke marinade.

 

3. Arrange on baking sheet and broil until golden brown.

 

4. Mound 2 teaspoons of artichoke mixture on each bread slice.

 

5. Thinly slice Brie. Top artichoke mixture with Brie, covering completely.

 

6. Broil until cheese bubbles.

 

7. Sprinkle with crushed red pepper and serve.

 

Makes 24 appetizers.
