Basil-Roasted Plum Tomatoes

This roasted tomato recipe is out of this world.  Basil blending with wonderful plum tomatoes to create such a fantastically flavorful side dish that can be served as a salad or just kept around for snacking at night. Easy to make. Even more easy to enjoy!

 

8 plum tomatoes

 

Kosher salt and freshly ground black pepper

 

16 whole fresh basil leaves

 

1/4 cup olive oil

 

1. Preheat the oven to 400*F. Line a sheet pan with parchment paper.

 

2. Arrange the tomato halves cut side up on the sheet pan.

 

3. Sprinkle with salt and pepper and scatter the basil leaves on top.

 

4. Drizzle with olive oil.

 

5. Roast until soft and lightly browned, about 20 minutes.

 

Serve at room temperature.

 

Makes 8 servings.
