Cherry Crunch‏

Cherry crunch is an old baking classic.  Summer and cherries are perfect mates for each other. When buying cherries, buy cherries that are dark in color and plump. For sour cherries they should be a true red color. The stems should be attached and avoid any with brown spots. You can store cherries  in your fridge but do not wash before storing. Be sure to wash before using. Cherries are high in antioxidants and a great source of beta carotene, Vitamin C and Vitamin E. This cherry recipe is sure to please every cherry lover in your household.

 

2 medium organic Granny Smith apples

 

1/4 cup sucanat or rapadura

 

1/2 teaspoon almond extract

 

2 tablespoons arrowroot powder

 

1/2 cup unsweetened cherry juice

 

1/8 cup stevia mixed with 3 tablespoons cinnamon

 

1/3 cup old-fashioned rolled oats

 

1/3 cup walnuts

 

2 tablespoons whole wheat flour

 

3 tablespoons grape seed oil

 

 

 

1. Preheat the oven to 400*F.

 

2. In a large bowl, mix together the cherries, apples, stevia and cinnamon and the almond extract. Set aside.

 

3. In a small cup, mix the arrowroot powder with the unsweetened cherry juice and add to the fruit mixture. Stir well.

 

4. Pour this mixture into a non-stick 8-inch square baking dish.

 

5. Mix together the remaining ingredients and crumble the mixture on top of the fruit.

 

6. Bake for 30 minutes. remove and serve warm.

 

Makes 6-8 servings.
