Cinco de Mango Salsa

Mangoes are rich in vitamins A and C and potassium. They have been found to block the growth of the most common type of breast- and colon-cancer cells.  This mango salsa recipe is extra special and very easy to create. The jalapeno pepper adds a nice kick to this excellent salsa mixture. Enjoy! 

 

1 medium jalapeno pepper, stemmed, seeded and minced

 

2/3 cup diced red bell pepper

 

1/3 cup diced red onion

 

2 tablespoons chopped fresh cilantro

 

2 tablespoons fresh lime juice

 

1 tablespoon olive oil

 

1/2 teaspoon ground cumin

 

1/2 teaspoon kosher salt

 

3 large ripe mangos, peeled, pitted and diced

 

 

1. Stir together all ingredients in a medium bowl.

 

Makes 6 servings.
