Microwave-Roasted Potatoes

The average American eats 124 pounds of potatoes per year — Germans eat more than 200 pounds per year. This microwave potato recipe is infused with great tasting herbs and spics. Your family will love this quick and easy appetizer potato recipe. Enjoy! 

 

4 medium russet, yellow-flesh or white potatoes or 6 to 8 small red potatoes

 

Vegetable or olive oil


Salt and black pepper


Chopped parsley, rosemary or thyme, or other seasoning 

 

1. Cut potatoes into uniform cubes.
 
2. Place in microwave-safe dish or a microwavable steamer bag. 
 
3. Drizzle potatoes with oil and season with salt and pepper. 
 
4. Sprinkle with seasoning and toss to coat potatoes evenly. Cover tightly with lid or plastic wrap. 
 
5. Microwave on high for 10 minutes (cooking time may vary depending on your microwave) or until potatoes are done.
 
6. Use oven mitts or tongs to remove from microwave. Remove plastic wrap carefully to prevent burns from steam.
 
Makes 4 servings.
