New Year's Day Black Eyed Peas

This bean recipe is a long standing tradition here in the South. Start your year off right by cooking up a batch for your friends and loved ones. I love the spices and mushrooms which combine to make this recipe a real down home treat. Happy New Year!

2 cups dried black eyed peas

 

5 cups water

 

1 cup vegetable broth

 

1 cup peeled, crushed tomatoes

 

1/2 to 1 teaspoon cayenne pepper

 

2 tablespoons basil

 

1 tsp. all-purpose herb seasoning

 

2 tablespoons canola or extra light virgin olive oil

 

2 cloves minced garlic

 

1/2 cup diced onion

 

1 cup diced celery

 

1 cup diced mushrooms

 

Salt

 

 

1. Combine black eyed peas and water in pan.

 

2. Bring to boil then cover and simmer on medium-low for 30 minutes, or until peas are tender, but not soft.

 

3. Drain black eyed peas.

 

4. Add vegetable broth, crushed tomatoes, cayenne pepper, basil and herb seasoning. Simmer on medium-low.

 

5. Sauté in vegetable oil the garlic, onion, celery and mushrooms until onion is transparent.

 

6. Add sautéed mixture to black eyed peas and mix well. Salt to taste.

 

7. Simmer on medium-low another 15 minutes and serve.
