Taylor Prince of Raleigh, North Carolina sent in a fabulous strawberry cake recipe. North Carolina is the fourth largest producer of strawberries in the country. Almost all strawberries grown in North Carolina are eaten in the state. Growers who plant on plastic set out about 17,500 plants per acre each fall. One acre can yield as much as 20,000-30,000 pounds of strawberries over the season. Go to your nearest strawberry grower, pick a bushel and make an exciting cake for the weekend!
Cake:
4 eggs
3/4 cup vegetable oil
1 package strawberry Jell-O
1/2 cup water
1 pack French vanilla cake mix
1-1/2 cups fresh NC strawberries (needs to be frozen)
1. Mix first 5 ingredients and then mix into cake mix. Beat well.
2. Put into two round layer pans and Bake at 350*F for 25 minutes.
3. Crush frozen strawberries and put between layers.
Icing:
1 stick butter, softened
1 lb. powdered sugar
half-and-half or cream, as needed
1/2 cup (or more) strained strawberries
1. Cream butter with sugar, adding cream as needed to obtain proper icing consistency.
2. Add strawberries.
3. Mix together and spread on cake.
