Super Moist Orange Cake

This spectacular cake recipe will thrill your friends and family on a Sunday afternoon! It is moist, bold, and wonderfully colorful. Make a pot of good coffee and watch this cake disappear. 

 

Super Moist Orange Cake

 

Makes 8 Servings

 

2 1/2 teaspoons non-caloric liquid sweetener

 

1/2 cup butter, melted

 

2 eggs, beaten

 

1 1/4 cups sifted cake flour

 

1/4 teaspoon salt

 

2 teaspoons baking powder

 

2/3 cup fresh orange juice

 

 

1. Stir 2 teaspoons sweetener into butter. Add eggs and mix well.

 

2. Add sifted flour, salt, and baking powder alternately with 1/3 cup orange juice, mixing until blended.

 

3. Pour into 9-inch layer cake pan, lined on the bottom with wax paper.

 

4. Bake in preheated moderate oven (375 F.) for about 30 minutes. (Cake layer will be thin.)

 

5. Remove to serving plate and peel off paper. Just before serving, mix remaining 1/2 teaspoon sweetener and 1/3 cup orange juice in small saucepan.

 

6. Bring to a boil and simmer for 2 to 3 minutes. Spoon over slightly warm or cold cake.
