This exciting fajitas recipe will bring the taste of Mexico right to your kitchen table! This recipe is perfect for a garden dinner party or possibly a first date meal. Impress your future wife or astound your friends and family with a taste from south of the border. Add a cold chest of of your favorite Mexican beer and let the fireworks begin.
600g (1lb 5oz) rump steak, trimmed
2 tablespoons sunflower oil
3 tablespoons fajita seasoning mix
1 red onion, sliced
2 yellow peppers, sliced
6 tablespoons chopped fresh coriander
Juice 1/2 lime
To serve:
8 soft flour tortillas, warmed
Soured cream
Guacamole
Shredded iceberg lettuce
Sliced jalapeno peppers
Tomato salsa
Lime wedges
1. Batten out the steak until it is about 1cm (1/2 in) thick.
2. Cut into strips and combine with the oil and seasoning mix.
3. Heat a wok until searing hot, add the beef and stir-fry for 2 minutes.
4. Add the onion and peppers, and cook over a high heat for 3 minutes until lightly charred.
5. Scatter over the coriander and squeeze over the lime.
Serve straight from the pan.
To assemble, spoon a little spicy beef into a tortilla and then fill with a selection of your favorite goodies; try a dollop of soured cream, guacamole and a good handful of iceberg lettuce.
Finish with an extra squeeze of lime and enjoy.
