This coffee recipe comes courtesy of David Lebovitz and his great food blog, living the sweet life in Paris. A simple iced coffee recipe for anytime of the year.
2 medium scoops vanilla or coffee ice cream, softened slightly
2 or 3 shots strong espresso, cooled
1/2 cup Baileys Irish Cream
a few ice cubes
unsweetened cocoa powder or grated chocolate
1. In a cocktail shaker or blender, combine the ice cream, espresso, Baileys, and ice.
2. Shake or blend vigorously, until the ice cream has melted and is smooth.
3. Pour into short tumblers and sprinkle the tops with cocoa powder.
If you use a blender, there may be fragments of ice, which I don't mind. If you do mind, strain them out.
