This simple yet glamorous grapefruit and mint cooler recipe is perfect at any time of the year. Enjoy!
1 bunch fresh mint, reserve 6 sprigs for garnish
2 cups 100% Florida pink grapefruit juice
4 tablespoons freshly squeezed lemon juice
½ cup water
½ cup sugar
2 ½ cups club soda
1. In large pitcher, crush the mint leaves lightly and add grapefruit juice.
2. Infuse at room temperature for 30 minutes.
3. Add the lemon juice. Heat water until very hot; dissolve sugar in water to make sugar syrup.
4. Add sugar syrup to taste; stir well.
5. Fill six tall glasses half full with grapefruit juice mixture, add cubed ice and top with club soda.
Garnish with fresh mint sprigs. Refrigerate leftovers.
Makes 6 servings.
