Applesauce Cranberry Nut Bread

This nourishing nut bread recipe was submitted by Dae Thompson  Applesauce Cranberry Nut Bread

of Marietta, Georgia. Dae relates that this quick to prepare 

bread is a money maker at any bake sale!  She

has sold too many to count.  Dae also will give

it every year as a Holiday gift to friends and

co-workers. 

 

2 cups granulated sugar


2-1/2 cups applesauce (1~24 oz. jar)


2/3 cup canola oil


4 eggs


1/2 cup milk


4 cups all purpose flour


2 teaspoons baking soda


1 teaspoon baking powder


1/2 teaspoons salt

 

1 teaspoon ground cinnamon


1/2 teaspoon ground nutmeg


1/4 teaspoon allspice


1 cup chopped pecans


1/2 cup raisins


1/2 cup dried cranberries


Shortening for greasing pans

TOPPING:


1/2 cup chopped pecans


1/2 cup dark brown sugar


1 teaspoon ground cinnamon


1/4 teaspoon ground nutmeg



 

1. In a small bowl, combine topping ingredients and mix until crumbly. Set aside.


2. Preheat oven 350*F. Grease 2 loaf pans with shortening and dust with flour, set aside.

 

3. In a small bowl, separate the raisins and cranberries and dust with flour. (This will keep them from sinking into the batter.) Set aside.


4. In a large bowl with an electric hand mixer combine sugar, applesauce, oil, eggs, and milk, blend well.


5. In a separate bowl, sift together flour, baking soda, baking powder, salt, cinnamon, nutmeg and all spice.

 

6. Add dry ingredients to sugar mixture and blend well, scrape down the sides of bowl as needed.

 

7. Add the nuts, raisins and cranberries, stir with a sturdy spoon until well blended. Pour batter evenly into loaf pans.


8. Sprinkle topping mixture over batter evenly. Bake 1 hour, covering loosely with a tent of foil for the last half hour if the top is getting too brown. Test for doneness with a toothpick, may require 10-15 minutes more. Cool on rack.


Makes 2 loaves or 6 mini loaves.  

Notes: It is great if you warm a slice in the micro and spread a little soft cream cheese on it!


A loaf wrapped in plastic wrap, then foil will freeze well.
