Low Fat Banana BreadLow Fat Banana Bread

2 1/2 cups flour

1 cup sugar

3 1/2 tsp. baking powder

1 tsp. salt

3 Tbs. applesauce or canned pure pumpkin

3/4 cup low fat or skim milk

1/4 cup egg substitute

1 cup mashed bananas (2 or 3 medium size)

1/2 cup ground flax seeds or chopped nuts

1. Heat oven to 350 degrees. Grease a 9x5x3 in. bread pan with cooking spray.

2. Measure all ingredients, except bananas, into a large mixing bowl. Beat on medium speed for about a half minute, add mashed bananas and beat thoroughly. Pour into prepared pan.

3. Bake for 55 to 60 minutes or until tooth pick inserted into center comes out clean. Cool and remove from pan.
