This outstanding bread recipe is a great way to start off the New Year. It is fairly easy to make and the ingredients are few. Do not be afraid to make this ahead of time so you are ready for all the festivities. Happy New Year!
1 package active yeast
3/4 cup whole milk
1/2 teaspoon ground cinnamon
4 large eggs
1/2 cup butter, melted
1 1/2 teaspoons grated orange rind
3/4 cup plus 2 tablespoons white sugar
4 1/2 cup all-purpose flour
Raisins or other dried fruit(optional)
1. Prepare the yeast. Dissolve the yeast in 1/4 cup of warm milk. Set aside. Prepare milk mixture. Beat three eggs, then mix in the sugar, milk and orange rind.
2. Prepare the flour. Sift the flour, salt and cinnamon in large bowl. Create a 'well' in the center for wet ingredients.
3. Prepare the dough. Pour the yeast mixture directly into the well, then start mixing the flour from each side.
4. Add the melted butter to form the dough. Shape and knead the dough. Mix the dough thoroughly with your hands and knead in the bowl until soft and elastic. Turn out onto floured surface and knead for at least 10 minutes.
5. Let the dough rise. Butter a small bowl and place dough inside. Top with a kitchen towel and leave in a warm area for at least 1 1/2 hours until the dough has doubled in bulk.
6. Prepare to bake. Grease a large loaf pan with butter and set aside. Reheat oven to 400 degrees Fahrenheit. Transfer the dough. Punch down the dough and knead and shape to fit the pan. Place in pan and insert coin somewhere in the middle.
7. Add egg and sugar glaze. Combine a beaten egg and 2 tablespoons of sugar in small bowl, then brush on top of loaf.
8. Bake for 45 minutes until lightly brown. Cool on wire rack before serving.
