1 lb. sliced bacon,
1 med. Sweet onion, diced
6 eggs, lightly beaten
4 cups frozen shredded hash browns
2 cups mild cheddar cheese-shredded
1-1/4 c. Swiss cheese-shredded
1-1/2 cups small curd cottage cheese
1. Preheat Oven to 350 degrees. In large frying pan or skillet, cook the bacon until it is crisp, drain. In the last few minutes of cooking the bacon, add the onions and cook them with the bacon. Drain well.
2. Mix together all the other ingredients- hash browns, cheddar cheese, Swiss cheese, cottage cheese AND the beaten eggs.
3. Add the bacon and onions to the mix above. Grease a 13 X 9 in. pan and spread the entire mixture evenly in the pan.
4. Put the pan in the center of the oven. Bake it uncovered for approximately 35 to 40 minutes. When the eggs are set and bubbling, it is done. Let this casserole stand for 10 minutes before serving. It will serve 8 - 10 people
