Denver Quiche

This omelet recipe combines the balance and texture of egg noodles with the robust flavors of ham, green peppers, and onions. They form to create a power packed recipe that will always leave an impression. The extra added touch of prepared mustard is an added bonus. Enjoy!

 

Cooking spray

 

4 ounces (about 2 cups) fine egg noodles,

cooked and drained

 

1 cup chopped green peppers

 

3 tablespoons chopped onion

 

1 tablespoon water

 

1 cup (4 oz.) chopped cooked lean ham

 

6 eggs

 

1 cup skim or low-fat (1%) milk

 

2 teaspoons prepared mustard

 

 

1. Evenly coat deep 9-inch pie plate with spray. To form crust, spread noodles over bottom and up sides of pie plate.

 

2. In small saucepan over medium heat, cover and cook peppers, onion and water until peppers are crisp-tender.

 

3. Stir in ham. Sprinkle evenly over noodle crust.

 

4. In medium bowl, beat together eggs, milk and mustard until thoroughly blended.

Carefully pour over vegetables and ham.

 

5. Bake in preheated 375*F oven until puffed in center and knife inserted near center comes out clean, about 30 to 40 minutes.

 

6. Let stand 5 minutes before serving.
