The lovely Dae Thompson of Marietta, GA. Seafood Eggs Benedict Florentine

submitted this wonderfully rich and tasty breakfast

egg recipe. 3 English muffins

1 pkg. frozen chopped spinach, thawed

6 large eggs

1 pkg. Louis Kemp imitation crab meat (Surimi) shredded & warmed

1-1/4 cup Hollandaise sauce, made from scratch or Knorr mix

Salt & pepper to taste

Fresh parsley or chives for garnish

4 oz. unsalted butter

2 tsp. vinegar

2 tsp .lemon juice

3 egg yolks

Salt and pepper to taste

2. Place the bowl over a saucepan of hot water and whisk until the mixture is thick and fluffy.
