Warm Potato Salad with Bacon

This potato salad recipe adds bacon and onions to form a wonderful taste and texture. The flavors are robust and sure to please. Save a spot on any future table for this incredible potato salad recipe!

 

Warm potato salad with bacon

2 pounds potatoes

 

4 ounces bacon

 

1 large or 2 small onions

 

1 tablespoon butter

 

4 ounces broth (chicken, vegetable or beef)

 

4 tablespoons oil (e.g. olive)

 

4 tablespoons vinegar (e.g. white wine or herb vinegar)

 

salt & pepper

 

2 tablespoons parsley, minced

 

Pot to boil potatoes

 

Pan to fry bacon & onions

 

Bowl to mix and serve salad

 

 

1. Wash the potatoes and cook them in salt water until they are soft but not to the point where they fall apart. Test them with a fork. Take them out of the salt water and let them cool down a bit.

 

2. Peel the still warm potatoes, cut them in half; slice each half into 1/8" slices. Put them into a bowl.

 

3. Dice the bacon. Peel and dice the onions. Heat up the butter in a pan; add the diced bacon and diced onions; brown both for a couple of minutes until the bacon is crisp but not burned. Pour over the potatoes.

 

4. Heat up the broth and pour over the potato, onion, and bacon mixture. Add the oil, vinegar, and parsley.

 

5. Add salt and pepper to taste.
