This excellent brown bag/cubicle recipe is so simple to make and a great lunchtime menu option. Apricots and Brie adds flavor, zest and sophistication. Make your coworkers jealous and go ahead and share if you want to!
2 cup shredded cooked chicken
1/2 cup apricot jam
1. Stir together shredded cooked chicken and apricot jam in a saucepan.
2. Cook over medium-high heat until warm.
3. Serve on toasted bread with mustard and slices of Brie.
Makes 4 servings.
