This brown bag/cubicle recipe adds a nice chicken twist to the traditional Cuban sandwich. Add a bag of your favorite lunchtime chips and enjoy your respite from work!
1/4 cup mayonnaise
1 teaspoon chopped chipotle in adobe
4 hoagie rolls
Dijon mustard
1 slice deli ham
dill pickle slices
2 slices Swiss cheese
1. Mix 1/4 cup mayonnaise and 1 tsp chopped chipotle in adobo; spread on top halves of 4 hoagie rolls.
2. Spread Dijon mustard on bottom halves and add sliced cooked chicken, 1 slice deli ham, dill pickle slices and 2 slices Swiss cheese on each.
3. Grill sandwiches on panini press or in a skillet.
Makes 4 servings.
