This classic sandwich/wrap recipe maxes out at 197 calories and is perfect for a busy, action packed work day. It can easily be made ahead of time and is perfect for a brown bag lunch at the cubicle or corner office! It boasts healthy spinach and tangy dressing which combine to give this recipe 25 grams of protein!
Four 8-in. plain or whole-wheat flour tortilla wraps
4 Tablespoon fat-free Thousand Island dressing
6 cups baby spinach
8 ounces sliced 97% fat-free honey-roasted & smoked turkey breast (such as Healthy Choice)
4 ounces thinly sliced reduced-fat, low-sodium Swiss cheese (such as Lorraine)
4 cups bagged classic coleslaw mix
1. Spread each tortilla with 1 Tablespoon dressing.
2. Top each to within 1 in. of an edge with 1/4 the spinach, turkey, cheese and coleslaw mix.
3. Roll up tightly from side with fillings.
4. Wrap each in plastic wrap and refrigerate at least 15 minutes.
5. Cut diagonally in halves or thirds.
Healthy spinach, coleslaw and low fat turkey breast stand in for high-sodium sauerkraut and corned beef in this version of the classic sandwich.
