Italian Chicken Salad Sandwich

This great cubicle sandwich recipe will make lunchtime a special kind of treat. Top off with a root bear or glass of healthy lemonade and you will be good to go for the rest of the day!

 

1 cup chopped cooked chicken

 

2 finely chopped hard-cooked eggs

 

2 anchovies (chopped)

 

1/2 small onion, mined

 

1/3 cup mayonnaise

 

Salt and pepper to taste

 

 

1. Mix chopped cooked chicken with chopped hard-cooked eggs, anchovies, onion, mayonnaise and salt and pepper.

 

2.  Make sandwiches on buttered bread sprinkled with chopped flat-leaf parsley.

 

Makes 4 servings.
