Sliced-Egg Sandwich with Herb Mayonnaise

This sandwich recipe is perfect for a light lunch at work or a busy schedule at school. There is no reason not to eat healthy and this sliced-egg recipe will allow you to do just that. Powerful flavors combine with simple, inexpensive ingredients to create a sandwich with incredible down home goodness!

 

1 tablespoon mayonnaise

 

1 tablespoon chopped parsley

 

1 teaspoon Dijon Mustard

 

Pumpernickel Bread

 

2 hard boiled eggs

 

1/2 cup watercress

 

Salt

 

Pepper

 

1. In a small bowl, combine 1 tablespoon mayonnaise, 1 tablespoon chopped parsley, and 1 teaspoon Dijon mustard.

 

2. Spread on 2 slices Pumpernickel bread and form a sandwich with 2 sliced hard-boiled eggs and 1/2 cup watercress.

 

3. Season with salt and pepper.

 

Make up to 1 day in advance and store, tightly wrapped, in the refrigerator.

 

Makes 1 serving.
