This old standby classic sandwich recipe is a favorite all the time and everywhere. You can pair this recipe with sliced ham or chicken as well!
The peanuts and cream cheese add a wonderfully differant touch.
1/2 cup chopped peanuts
1 (3-ounce) package cream cheese. softened
1/2 cup chopped celery
2 tablespoons mayonnaise
8 slices Whole Wheat Bread
1 cup shredded Swiss cheese
1 cup shredded Colby cheese
2 tablespoons butter, softened
1. In a small bowl, combine peanuts, cream cheese, celery, and mayonnaise, mixing until combined.
2. To make sandwiches, spread peanut spread on one side of each piece of bread.
3. Top each with some of the cheeses, then put together. Spread butter on outsides of sandwiches.
4. Toast in a dual-contact grill or on a hot griddle, pressing down on the sandwiches as they cook. When bread is toasted and the filling is melted, cut in half and serve or chill for your next brown bag lunch day.
Makes 4 servings.
