Dae is one of our regular recipe contributors. Her recipes are always full of flair and wonderful flavors!
6 tbs. unsalted butter or margarine, melted
3/4 cup sugar
1/2 tsp. vanilla extract
1/4 tsp. almond extract
2 large eggs, lightly beaten
1/2 cup all purpose flour
1/4 cup cocoa powder
1/4 tsp. baking powder
dash salt
1/4 cup finely chopped almonds or almond slices
vegetable spray
1. Preheat oven 350*F. Line small muffin cups with paper baking cups. Spray cups with vegetable spray. (This is especially necessary if you don’t use the paper liners.)
2. In a medium bowl, stir together the butter, sugar and extracts with a wooden spoon. Add the eggs and beat well. In a separate bowl, sift together flour, Cocoa powder, baking powder and salt. Gradually add flour mixture to butter mixture, beat with spoon until well blended and smooth.
3. Using a gravy ladle, fill muffin cups about half full with batter. Sprinkle nuts over top of each or insert one or two almond slices into each brownie, if desired.
4. Bake 12-16 minutes or until wooden pick inserted in center comes out clean. Cool slightly then remove brownies to wire rack. Cool completely.
