Aztec Chicken with Hacienda Beans
Serves 4- Preparation Time: 30 min.
4 boneless and skinless chicken breasts
1/4 cup apple juice
1/4 Bertolli Extra Virgin Olive Oil
1 tbsp. Tone's Taco Seasoning
1 tsp. cinnamon
1. Combine Bertoli Extra Virgin Olive Oil, apple juice, cinnamon, and Tone's Taco Seasoning in a resealable plastic bag. Add chicken; marinate in a refrigerator a minimum of 15 minutes.
2. grill or pan fry chicken breasts over medium-high heat until internal temperature reaches a minimum of 170 F or juices run clear.
Optional addition of sweet potato fries:
Blanch one sweet potato cut into fries in boiling water. Cook 3-4 minutes. Sprinkle with cinnamon.
Hacienda Beans
Serves 4-6-Preparation Time: 15 Min.
2 tbsp. Bertolli Extra Virgin Olive Oil
1/4 cup red bell pepper, diced
1/4 cup orange bell pepper, diced
1/2 tsp. Tone's Cajun Seasoning
1/4 cup onion, diced
1/4 cup yellow bell pepper, diced
1 tsp. Spice World Minced Garlic
2 (15oz.) cans Bush's Baked Beans
1. heat bertolli Extra Virgin Olive Oil in a skillet, over medium heat.
2. Add onions, bell peppers, garlic, and Tone's Cajun Seasoning. sauté for 2-4 minutes or until vegetables begin to soften.
3. Add the Bush's beans and simmer for about 5 minutes or until heated through and serve.
