3 egg whites

3/4 cup sugar

1/2 cup butter, melted and cooled

1/4 tsp vanilla extract

1/4 tsp almond extract

1 cup all purpose flour

2 tablespoons water

1. Before you begin making the cookie, you'll need to make the fortune inside first. Make sure they are positive things!

2. Preheat your oven to 375 degrees. Grease cookie sheets, or line cookie sheets with parchment paper. Whip your egg whites and sugar with your mixer on high speed for approximately 2 minutes. Reduce your mixer speed to low and stir in butter, vanilla, almond extract, water and flour one at a time, blending ingredients well. The mixture should resemble pancake batter. Spoon mixture into 3 inch circles on the baking sheet. Leave room between each circle as batter will spread as it cooks. Bake for 5-7 minutes, watching carefully after the cookies have been in for five minutes. When edges begin to brown slightly, remove from oven.

3. When cookies are removed from oven, you will need to work quickly to shape them. You may want a second pair of hands to help you. Quickly place a fortune inside the cookie, fold the cookie in half, then fold in half again to form a horseshoe shape. If cookies spring open, put them in a muffin tin or remove from the cookie sheet until they set. Once the cookies set and are hardened, they are ready to enjoy!
