Crystal loves making this recipe when she is

babysitting the children next door. It keeps

them occupied and ready for anything! Thank

you Crystal!

Peanut Butter Cookies

4 1/2 oz butter, softened

5 1/2 oz chunky peanut butter 8 oz granulated sugar

1 egg, beaten

5 1/2 oz plain flour1/2 tsp baking powder

Pinch of salt

2 3/4 oz unsalted natural peanuts, chopped 

1. Lightly grease 2 baking trays or cookie sheets.

2. In a large mixing bowl, beat the butter and peanut butter.

3. Gradually add the sugar and egg and mix well.

4. Add the egg a little at a time to prevent curdling

5. Suave the flour, baking powder and salt into the peanut butter mixture.

6. Add the peanuts and bring all of the ingredients together to form soft dough.

7. Wrap and leave to chill for half an hour.

8. Form the dough into 20 small balls and place them on to the prepared baking trays about 5 cm apart.

9. Flatten slightly with your hand and ensure that no 2 cookies are touching.

10. Bake in an oven 5 for 15 minutes until golden.

11. After baking leave to cool on a wire rack.
