Peanut Butter Shadow Cookies

This exquisite cookie recipe was submitted by one of our food blog partners, Rosemary and The Goat. The addition of Nutella chocolate gives these cookies a wonderful balance and texture. Make a batch for homework night and put a big smile on your child's face.

 

1/2 cup brown sugar, packed


1/2 cup white sugar


1 stick butter


1 egg


1 cup peanut butter


1/4-1/3 cup Nutella


1-2 cup chopped mixed nuts


1/2 teaspoon salt


1/2 teaspoon soda


1 1/2 cup all purpose flour


1/2 teaspoon vanilla

 

 

1. Cream the sugars and butter using stand mixer.

 

2. Beat in the egg and peanut butter.

 

3. Add in the salt and the soda.

 

4. Slowly pour in the flour and add the vanilla.

 

5. Carefully fold in the Nutella and blend enough to just swirl the Nutella through the dough to make “shadows”.

 

6. Roll cookie dough in golf ball size pieces and roll and press the nuts into all surfaces.

 

7. Put on ungreased cookie sheet. Bake at 350° for 10-12 minutes.

 

I made my fairly large and they took about 16-18 minutes to bake. Depending on the size you make them you may get 3-4 dozens. (I doubled the recipe and got about 40-50 very large cookies.)
