A wonderful childhood cookie recipe rediscovered. Enjoy this family fabulous recipe with your children!
2 1/4 cup flour
1 tsp. baking soda
1 tsp. salt
1 cup butter, softened
3/4 cup granulated sugar
3/4 cup light brown sugar
1 tsp. vanilla extract
2 eggs
1 cup chocolate chips
1/2 cup crushed graham crackers
1/2 cup mini marshmallows
1. Preheat oven to 375 degrees F. Combine the flour, baking soda and salt in a bowl and set aside. Beat together the butter and both types of sugar. When combined, add the vanilla and eggs and mix thoroughly.
2. Stir in the chocolate chips and crushed graham crackers, a small amount at a time. Drop in rounded tablespoons onto a baking sheet. For thinner cookies, lightly press down the dough, spreading it out.
3. Lightly press three or four mini marshmallows into the top of each cookie--this keeps them from getting stuck to the bottom of the baking sheet.
4. Bake for 9 to 11 minutes, or until the edges begin to brown.
5. Removing the cookies before they have browned completely will result in your cookies staying softer for longer. Allow cookies to cool on a wire rack.
