Swedish Christmas CookiesSwedish Christmas Cookies

Makes Approx. 3 Dozen

1 7 oz. container of almond paste~found in

your baking section of your grocery store

1/2 cup butter

1 cup sugar plus extra for pressing cookies

1 egg plus 1 egg white

1 1/4 cup flour

1 teaspoon baking powder

1 cup oats

1/2 cup coconut

powdered sugar

1. Grease cookie sheets and set aside. Preheat oven to 350 degrees. Mix well- almond paste and sugar.

2. Add egg and egg white and beat for 3 minutes. Into the flour, stir in baking powder and blend well. Then add to wet mixture. Last combine in oats and coconut.

3. Roll dough into 1 inch balls and place onto cookie sheet.

4. Bake for 10-12 minutes. Let cookies cool completely and dust with powdered sugar before storing in an air tight container.
