This nut recipe is a great entertainment item. Place at the center of your table and watch your friends or family grab handfuls and handfuls.

1 egg white

3/4 cup brown sugar

1 tablespoon ground cinnamon

1/2 teaspoon ground ginger

A pinch of ground cloves

A pinch of cayenne pepper

1/4 teaspoon salt

2 teaspoons vanilla extract

3 1/2 cups (about 1 pound) pecan or walnut halves or whole almonds

1. Preheat the oven to 325*F.

2. In a medium bowl whisk egg white until frothy.

3. Add the brown sugar, ground cinnamon, ground ginger, ground cloves, cayenne pepper, salt, and vanilla extract to the egg mixture.

4. Stir until combined. Add the 3 1/2 cups of nuts to the bowl.

5. Mix together until all the nuts are coated.

6. Pour onto a lightly oiled baking sheet. Bake for 30 minutes.

Turn the nuts from time to time with a large offset spatula until all the nuts are coated and dry.

Let cool before serving.

Store in an airtight container.

Makes 3 1/2 cups.
