Turtle CheesecakeTurtle Cheesecake

2 tablespoons unsalted butter

2 cups vanilla wafer crumbs

14 ounces individually wrapped caramels

1/2 cup semisweet chocolate chips

1 (5-ounce) can evaporated milk

1/2 cup white sugar

1 cup chopped pecans

1 teaspoon vanilla extract

2 (8-ounce) packages cream cheese, softened

2 eggs

1.  Melt the butter and combine with the vanilla wafer crumbs. Press into the bottom of a 9-inch springform pan. Place the evaporated milk in a 1-1/2 quart heavy saucepan, and melt the caramels in it over low heat. Heat and stir frequently until smooth. Pour mixture onto crust, and top with pecans.

2. In a large bowl, combine sugar, cream cheese, and vanilla; beat well until smooth. Add eggs one at a time, mixing well after adding each egg.

3. Melt the chocolate, and combine with the cream cheese mixture. Pour over the caramel pecan mixture in springform pan. Bake at 350F for 40 minutes. Loosen cake from the edges of pan, but do not remove rim until cooled. Chill completely.

I've tasted this only recently because I thought it was actually made out of turtles! How did it get its name anyway?

When I'm done with my homework and essay writing, I reward myself with a great-tasting slice of cake from the kitchen. I don't know if it helps with my schoolwork but I always get a good grade when I do that!

I'm a student in her fourth year in college. There are some days where I get so loaded with work and deadlines. I have no idea how I could manage through the day when I have a mountain of papers to accomplish and reports to present. I stay late almost everyday just to catch up on my schoolwork. On top of that, I also have responsibilitie s with my organization as I am also the VP. I have to make time for it and my academics. It's enough to make anyone's head spin in frustration. Nothing else can soothe my nerves except a slice of turtle cheesecake. One bite of it and I instantly feel like I'm in heaven. Thank God for cake!
