This Artichoke recipe is a delicious way to get nutrients that research shows we typically lack in our diets — fiber, vitamin C, magnesium and potassium. The Artichoke is a low-calorie, nutrient-rich vegetable. According to the USDA, one medium Artichoke is an excellent source of fiber and vitamin C, and a good source of folate and magnesium. Artichokes also are a source of antioxidants. In fact, research shows cooked Ocean Mist artichokes are the best antioxidant source among all fresh vegetables.
4 cups Artichoke Quarters with Herbs, drained
2 tablespoons shredded Parmigiano-Reggiano cheese
2 tablespoons shredded Romano cheese
2 teaspoons roughly chopped fresh thyme
1/4 teaspoon red pepper flakes
2 tablespoons extra virgin olive oil
1. Set an oven rack on the lowest position and preheat the broiler.
2. In a shallow oven-proof baking dish, arrange the artichokes in a single layer.
3. Combine the cheeses, thyme, and red pepper flakes and scatter over artichokes.
4. Drizzle the oil over the cheese.
5. Broil until the cheese is melted and the edges of the artichokes are lightly browned, 15 to 18 minutes..
