Asparagus Pasta Stir Fry

 

Asparagus is best enjoyed immediately after purchasing. Go to your supermarket or farmers market today and purchase the royalty of the vegetable family. This asparagus pasta stir fry would be a perfect and also healthy dinner option tonight. Enjoy!

 

1 pound Fresh Washington Asparagus, trimmed

 

1/2 cup sliced onion

 

2 tablespoons vegetable oil

 

2 tablespoons soy sauce

 

1 clove garlic, minced

 

1 teaspoon ginger root

 

1/2 teaspoon Worcestershire

 

1/4 teaspoon crushed red pepper

 

6 ounces Vermicelli or angel hair pasta, cooked and drained

 

1. Diagonally slice asparagus into 1-1/2 to 2 inch pieces.

 

2. Stir-fry asparagus and onion until crisp-tender.

 

3. Add seasonings and mix well.

 

4. Add cooked pasta and stir-fry until thoroughly heated and evenly mixed.

 

Makes 6 servings.
