This wonderful salad recipe marries two great vegetables: green beans and avocados. Extremely healthy, light, and inexpensive. A delight for any weekday or weekend gathering!
2 -15 ounce cans French-cut green beans, drained
8 green onions, chopped
2 avocados, chopped
1 - 8 ounce can non marinated artichoke hearts, drained and chopped
3/4 cup Italian salad dressing
Potatoes (optional)
1. Place green beans and green onions in bowl. Pour dressing over vegetables and chill overnight. Right before serving, mix in the avocado and artichoke.
2. Add potatoes (optional).
