Picnic-Perfect Tuna-and-Macaroni Salad

Quick and easy tuna salad is the perfect get fit recipe for the year. 312 calories with only 4 grams of fat make this tuna and macaroni salad recipe a must have item in your refrigerator. Enjoy! 

 

Salt and pepper

 

1  pound elbow macaroni

 

3  ribs celery, finely chopped

 

1/2  cup finely diced red onion

 

1/2  cup finely chopped fresh parsley

 

1  carrot, grated

 

1  12-oz. can tuna in water, drained

 

1/2  cup plus 2 Tablespoons reduced-fat mayonnaise

 

1/4  cup plain low-fat yogurt

 

1 tablespoon plus 1 teaspoon cider vinegar

 

 

1. Bring a large pot of salted water to a boil. Add macaroni and cook according to package instructions until al dente. Drain, rinse with cold water and drain again.

 

2. While pasta is cooking, combine celery, onion, parsley, carrot and tuna in a large bowl. Add cooled macaroni and toss to combine.

 

3. In a small bowl, whisk mayonnaise, yogurt and vinegar.

 

4. Season with salt and pepper and whisk. Pour over pasta and toss until well coated.

 

Cover and refrigerate until ready to serve.

 

Makes 8 servings.

Greetings! Cook the pasta about 1-2 minutes less that the package directions. The pasta will absorb the dressing and would become a bit soggy by the next day (if there's any left).
Canned chicken, canned crabmeat picked through for cartilage or frozen tiny salad shrimp, thawed can be substituted for the tuna. I also will garnish with grape tomatoes sliced in half just before serving.
