Shrimp and Mango Salad

This intense salad recipe combines two powerhouse ingredients: shrimp and mango. Add all these other wonderful ingredients and you have a salad that will definately be remembered! It is a great recipe that my family loves and often asks for, even the ones that are not on a low fat diet. It is great in the summer along with a BBQ sauce meal.

 

Shrimp and Mango Salad

1-2 large mango's peeled and diced

 

3/4 - 1 pound of shrimp

 

1/2 cup sliced green onions

 

Juice from 2 limes

 

1 tablespoon brown sugar

 

1 tablespoon soy sauce

 

1 green chili seeded and minced up

 

1 tablespoon fish sauce

 

Salad leaves (large so you can use as a wrap)

 

1 garlic clove minced

 

cilantro to taste

 

 

1. Cook and de-vein the shrimps if you bought them raw. You can grill them for added flavor or simply boil them with water. 

 

2. Combine the sugar, lime juice, soy sauce, fish sauce, garlic, chili, onion and cilantro together. Mix them all together.

 

3. Next add in the mango and mix well again.

 

4. Now add the shrimp and gently toss.

 

5. Place your lettuce leaf on a plate and fill with some of the mango shrimp salsa.

 

6. Now simply pick it up and eat. Easy to make and eat!
