Vegetarian CasseroleVegetarian Casserole

4 potatoes, sliced

3 or more tablespoons olive oil

4 carrots, very thinly sliced

2 ribs of celery, finely chopped

1 1/2 cups onion, chopped

1 pound mushrooms, sliced

2 cups broccoli, chopped

1 1/2 teaspoons salt

1/2 teaspoon pepper

4 cloves garlic, chopped

1 teaspoon dill

2 hard-cooked eggs, chopped

1 1/2 cups cheese of your choice, grated

1 cup vegetable broth, fresh or canned

1. Heat oven to 350 degrees. In a shallow saucepan, place the potatoes, barely covered with water. Cover pan and boil until potatoes are just soft. In a heavy saucepan, place the olive oil, carrots, celery, onions and garlic. Sauté for 5 minutes. Add the broccoli, salt and pepper and continue to sauté until onions are soft and broccoli almost cooked. Remove from heat and stir in potatoes and dill. Adjust seasonings.

2. Pour mixture into baking pan. Press ingredients slightly. Cover with chopped eggs and cheese. Pour the vegetable broth down the side of the ingredients. Cover with foil and bake for 20 minutes. Uncover and bake for an additional 10 to 20 minutes until all ingredients are cooked. Serve. Enjoy!
