Yellow Rice (Tumeric)

Turmeric is used for flavor and for the vibrant color it adds to food. Most supermarkets do carry it. Serve this rice along side of Seed Crusted Pork Roast or Caribbean Pork Kabobs.
 

2 teaspoons butter


1/2 cup finely chopped onion


2/3 cup long-grained enriched rice


1 1/2 teaspoons ground turmeric


1 teaspoon salt


1 1/2 cups water
 

 

1. In skillet with lid, melt butter over medium-high heat.

 

2. Stir in onion and saute until translucent, stirring occasionally, about 5 minutes.

 

3. Stir in rice, turmeric and salt, mixing well.

 

4 Stir in water, let come to a boil, lower heat, cover and cook for 15 minutes, until rice is tender.

 

Serves 4
