Italian Sausage Garden Skillet (University of Pittsburgh Tailgating Recipes)

The Pittsburgh Panthers football team is the interscholastic football team of the University of Pittsburgh. Pitt is now classified in the NCAA Division I Football Bowl Subdivision, and had its first sanctioned intercollegiate game in 1890. This tailgating recipe would be perfect for a chilly day of tailgating at Heinz Field. Go Panthers!

 

1 pound Natural Casing Italian Sausage, sliced into 3-inch pieces


1 green pepper, cut into strips


1 cup zucchini, sliced into 1/2-inch pieces


2 tablespoons butter


1 pound tomatoes, cut into chunks


1 cup pearl onions


1 teaspoon dried savory


salt and pepper to taste

 

 

1. Cook sausage, peppers and zucchini in butter until vegetables are tender, 6 to 8 minutes.

 

2. Add tomatoes, pearl onions and savory; simmer covered, 25 to 30 minutes.

 

3. Season to taste with salt and pepper.

 

4. Serve over rice or pasta.
