This meatball recipe is a healthier and lighter version than most tailgating recipes you may find. Ground turkey is a healthier alternative to ground beef. This meatball sandwich is the tops. Cheer on your New York Jets as they march to the Super Bowl. Go Jets!
1 pound ground turkey
1⁄3 cup finely chopped scallions
1⁄4 cup dried bread crumbs
3 tablespoons grated Parmesan cheese
White from one large egg
1⁄4 teaspoon pepper
1 can (28 ounces) crushed tomatoes
1 cup water
2 garlic cloves, smashed
1⁄4 teaspoon salt
1. Heat oven to 400*F. Mix the turkey, scallions, bread crumbs, cheese, egg white and pepper. Form into 20 balls.
2. Place on baking sheet; bake 15 minutes or until firm.
3. Remove meatballs to a large saucepan.
4. Add remaining ingredients and simmer, stirring twice, 30 minutes or until sauce thickens.
Serve on rolls or over spaghetti.
Makes 5 servings.
