This nutrient charged, refreshing tailgating recipe honors the University of Southern California Trojans Pacific-10 football team. The Spirit of Troy lives on with a wonderful recipe that would be a perfect thirst quencher as you head to the Los Angeles Memorial Coliseum to watch the Trojans win another game. Go Trojans!
1/2 cup diced fresh pineapple
1/4 cup diced fresh mango
3 large strawberries
1 ripe banana
1 cup silken tofu
1 cup skim milk
1/4 cup honey
1. Place the pineapple, mango, strawberries, banana, tofu, skim milk and honey in a food processor or blender.
2. Process until smooth.
3. Chill for one hour. (Ice can be added, if desired.)
Recipe Note:
Silken tofu comes in soft and firm styles. It comes packaged in water (usually found refrigerated in the produce section), or in shelf-stable boxes. The water-packed type can be kept for a week in the fridge; change the water daily to keep it fresh.
Makes 2 servings.
