Spanish Shrimp (Miami Dolphins Tailgating Recipes)

This Spanish infused tailgating recipe honors the Miami Dolphins of the Eastern Division of the American Football Conference (AFC) in the National Football League (NFL). In 1972, the Dolphins completed the NFL's first and only completely perfect season culminating in a Super Bowl win, winning all 14 regular season games, two playoff games and Super Bowl VII. Tailgate at the newly named Land Shark Stadium while enjoying  the balmy Miami breezes. Go Dolphins!

1 package (3 1/2 oz) fully cooked chorizo sausage, sliced

1 1/2 pound peeled, deveined raw large shrimp

1/2 cup dry sherry or dry white wine

1. Heat 1 tsp oil (preferably olive) in a large nonstick skillet over medium-high heat.

2. Add chorizo and sauté 2 minutes until browned.

3. Add shrimp and sauté 1 to 2 minutes or just until shrimp turn pink.

4. Add sherry and sauté 1 minute or until shrimp are cooked through.

5. Garnish with chopped parsley, if desired.

Makes 6 servings.
