1 pkg Knorr Vegetable Soup Mix

1/3 cup boiling water

3 large tomatoes, seeded and diced

3/4 cup each corn kernels and rinsed, cooked black beans

1/2 cup diced red onion

2 tbsp chopped coriander

1 tbsp each lime juice and olive oil

2 tsp finely chopped, seeded jalapeño

1 clove garlic, minced

1. Combine the soup mix and water in a large ceramic bowl. Let stand, covered, for 10 minutes. Stir in the remaining ingredients, cover and let stand overnight. Serve with tortilla chips or use as a condiment for hot dogs, burgers and grilled chicken. Makes 3 1/4 cups (800 mL).

Feisty Feta & Red Pepper Dip

1 pkg Knorr Vegetable Soup Mix

8 oz brick style cream cheese

1 cup each 2% yogurt and crumbled feta cheese

1/2 cup diced roasted red peppers

1 tsp hot sauce (or to taste)

1 green onion, chopped

1. Place all of the ingredients in the bowl of a food processor. Pulse until combined. Taste and adjust hot sauce if necessary. Chill for 1 hour. Serve with pita chips, bread sticks and assorted vegetables. Makes 3 cups (750 mL).
