Hearty BBQ Brunswick stew is perfect for a foggy, rainy southern night. No good southern barbeque is complete without Brunswick stew. It is the most delicious concoction imaginable and recipes for variations of Brunswick stew have been passed down through generations.
1 pound ground chuck or ground round
3/4 pound ground lean pork
2 (28-ounce) cans crushed tomatoes
3 tablespoons Worcestershire sauce (Lea & Perrins)
2 tablespoons ketchup
1 1/2 tablespoons butter
Salt to taste
ground black pepper to taste
1. In a Dutch oven, combine beef & pork.
2. Cook over medium-low heat for 30 minutes, stirring often and being careful not to over cook. Skim off excess fat.
3. Add tomatoes, Worcestershire sauce and ketchup, stirring to blend.
4. Cover and cook over low heat for 2 hours.
5. Add butter, stirring until melted. Simmer for 10 minutes.
Yields 1 1/2 gallons.
