This excellent ground beef recipe spotlights how taco-seasoned ground beef, tomatoes and corn Fiesta Taco Saladcan bring south-of-the-border flavor right to your table. This hearty salad is easy to make and even easdier to devour! 

 

1 pound ground beef or ground turkey

 

1 package (1 oz each) taco seasoning blend

 

1 can (14.5 oz. each) Hunt's Petite Diced Tomatoes, undrained

 

1 package (10 oz each) torn mixed salad greens (10 oz. package  = about 9 cups)

 

 

1. Brown meat in large skillet over medium-high heat; drain.

 

2. Add seasoning mix, tomatoes with their liquid and the corn; mix well.

 

3. Cook over medium-low heat 8 minutes; stirring occasionally.

 

4. Arrange about 1 1/2 cups of greens on each of 6 serving plates.

 

5. Top evenly with the meat mixture. Arrange tortilla chips around greens.

 

3. Garnish with cheeses, onions, olives and sour cream, if desired.

 

Makes 6 Servings (1 Salad Each).
